Easy Pumpkin Banana Walnut Bread
This easy pumpkin banana walnut bread recipe is filled with all the yummy fall flavors likes cinnamon, nutmeg, and PUMPKIN! It’s Super simple to make and perfect if you have a few really ripe banana’s you need to do something with! This bread makes you feel like its 50 degrees outside, leaves are falling, pumpkins are on porches and soups in the crock pot!
This recipe is super easy and bakes around 40-50 minutes. And I swear we always have at least two or three banana’s from the week that are very ripe. If I don’t have time to make banana nut bread I’ll just toss them into the freezer for a day I do have time to make it.
How to make pumpkin banana walnut bread
You’ll want to preheat your oven to 350 and grease your loaf pan. Or use parchment paper to line your pan so it doesn’t stick.
You’ll need two large bowls. One for dry ingredients and one for wet ingredients. Start by combining all your dry ingredients first. Flour, sugar, baking soda, baking powder, salt, crushed walnuts, nutmeg, cinnamon, and ground ginger.
In the other bowl add your two eggs and whisk them together and then whisk in your melted butter. Next, add your mashed bananas and pumpkin puree.
Combine the dry ingredients with the wet. Don’t over mix them. Use a spatula to avoid over mixing.
Next, Pour the batter into your greased loaf pan.
Bake your pumpkin banana walnut bread for 50-60 minutes. Use a tooth pick to check to make sure its baked all the way through. The tooth pick should come out clean. Lastly, let your loaf cool down for 10-15 minutes before removing from the pan.
Tips
- Make sure you use very ripe banana’s. The riper they are, the sweeter. You want thing to look pretty dark and brown when you make banana bread.
- If the inside is still not cooked through but the top is getting too brown, place a piece of foil over the top to prevent it from burning.
- Do not over mix your batter. This is so important. It can cause your bread to come out too dense & rubbery instead of moist and fluffy.
Pumpkin Banana Walnut Recipe
- 1 1/2 Cup All Purpose Flour
- 3/4 Teaspoon Baking Soda
- 1/2 Teaspoon Baking Powder
- 1 Cup Sugar
- 1/2 Teaspoon Salt
- 1 Teaspoon Cinnamon
- 1/4 teaspoon Ground Ginger
- 1/4 Teaspoon Ground Nutmeg
- 1/2 cup Crushed Walnuts
- 2 Large Eggs
- 1 Cup Ripe Banana's
- 1/2 Cup (1 stick) Butter (Melted and Cooled Down)
- 1 Cup Canned Pumpkin Puree
- 1/2 Teaspoon Vanilla Extract
Start by preheating your oven to 350 F. Grease your 8½ x 4¼-inch or a 9×5-inch loaf pan or line it with parchment paper.
Use a large bowl and combine all your dry ingredients. 1 cup Sugar, 1 1/2 cup flour, 1 tsp cinnamon, 1/4 tsp ground ginger, 1/4 tsp ground nutmeg , 1/2 tsp salt, 3/4 tsp baking soda, and 1/2 tsp baking powder.
In a separate bowl combine all your wet ingredients. Start with whisking your two large eggs and then adding your melted butter. Mix that together and then add your smashed bananas, 1/2 tsp vanilla extract, and 1 cup pumpkin puree.
Add your dry ingredients to your wet ingredients. Don't over mix them. It'll cause your bread to become dense and rubbery. Mixed with a rubber specula just until its combined.
Pour your batter into your loaf pan and bake for 50-60 minutes. Use a tooth pick to make sure its cook all the way through.
Let it cool 10-15 minutes before removing from the loaf pan.
